Letter no. 2: pink dosa season
Why beetroot goes in the batter, not on the tawa. Plus where to find us on Amazon and Blinkit.
This month’s recipe
Beetroot dosa. Stir 1 to 1½ tsp of beetroot powder into a cup of batter until the colour is even, then cook as usual. Add the powder to the batter, not the tawa, so it spreads evenly and the colour stays bright.
One kitchen tip
Always use a dry spoon. Natural powders with nothing added can clump if they meet a drop of water. If it happens, break it up with a dry spoon; the flavour is unaffected.
